Cheap and easy meal!
Chicken stir fry. Chop up about a pound of chicken into chunks. Fry it up in a skillet. Mix in a bowl in ABOUT a 3 Tbls of soy sauce, half cup of either orange juice, pineapple juice, or rice vinegar, 2 Tbls brown sugar and 1 tbls corn starch, ginger, and garlic. Dump it into the chicken. Steam a bag of mixed frozen veggis in the microwave and drain really well. Toss them in the pot with the chicken. Coat everything in the sauce, bring to a quick boil. Remove from heat. Stir in some canned, drained, mandarin oranges if you want. Yum!

Bean and cheese crisp burritos with Pico de Gallo.
Take canned beans, kidney, black, refried, or my favorite a mix. Rinse them and session them with Cumin, paprika, chili powder, salt, and garlic. Roll them up with a little cheese in a tortilla shell. Grill them with a little butter or coconut on a skillet until browned on every side. Serve with pico.
Pico is tomato, purple onion, cilantro, lime juice, garlic, and salt. Or try tomato, bell pepper, onion, garlic, salt, and lemon juice. Or any other combo... Chop up, toss together, and enjoy.
Some amazingly home made tortillas.... 3/4 cups all-purpose flour, 1 teaspoon baking powder, salt, 5 Tbls coconut oil ( solid), 3/4 cup very warm water. Cut the oil into the dry ingredients, until it is crumbly. Then stir in warm water. Roll out super thin and grill on a cast iron skillet on medium heat. A few seconds on each side!

I'm thinking about once or twice a week having meals from scratch available for pick up or delivery in the Spokane area. They would be partially prepped. What are the busiest nights of the week? What is your biggest obstacle to fresh home made food? Also, bread coming up for sale starting in July.

Lunch Menu!
Some people gasp when I say I make most everything from scratch, but I like to know what goes in my food. And yes occasionally I grab an instant processed junk meal... but 95% of the time I measure each ingredient, especially my breads. So sharing today, quick take on grill cheese and tomato soup. I was out of sandwich bread which has an hour rise time and 40 min cook time... not gonna happen for lunch. So I made my baguette,15-20 min rise and 15 min bake. I added cheese in the middle rolled it like a cinnamon roll and tada! Now soup... I can my own tomato juice but if you cant, buy tomato juice not soup from the store... no sugar or thickeners or preservatives. I add a little cornstarch or flour with a little milk. Powdered garlic and yum. Post if you would like the recipe in detail.

The idea of this is to give you ideas to cater to your family. So the recipe is a little vague on amount intentionally.
Tonight is fresh bean burritos... 20 minutes from start to finish.

Couple cans of refried beans, black besns, red beans, pinto beans, or kidney beans.
Warm up the beans and stir in taco seasoning, or garlic, salt, paprika, chili powder, cumin, and oregano. I like mine heavy in flavor so I add a lot...

Stir fry onions and bell peppers until soft.

Cut up equal parts tomatoes and purple onion, add in cilantro, garlic and lime juice. If you don't have this on hand use a yummy salsa, or tomatoes.

Add some shred cheese and lettuce.

This will make tasty burritos or quesidillas. For my boys I just pile on the beans and cheese and let them dip it in sour cream. For me I pile high with all of the above and enjoy. If you need a meat just do a chicken breast and chop it up nice. The beans carry plenty of flavor.
It's even better with homemade tortillas but those are more time. Comment if you want that recipe!
