Cantarito’s Peruvian Week Spotlight: Mazamorra Morada

Another dish with deep pre-Colombian, indigenous roots, mazamorra morada is a beloved, vibrant purple pudding. Made from purple corn, pineapple, & apple, and spiced with cinnamon and clove, this has become a cultural staple of Lima, Peru’s capital. So much that the people of Lima have been coined “mazamorreros” (lover of mazamorra). Next time you see your server Jordan, give him a shout out! 🇵🇪

Cantarito’s Peruvian Week Spotlight: Lomo Saltado

Peru has a very rich culinary history, and one style of cuisine that is quite popular is called “chifa,” which is a Chinese-Peruvian culinary fusion. In 1849 and for the following decades, there was a steady influx of Chinese migrating to Peru. With the Chinese flavors of umami, ginger, scallions, and sesame oil paired with Peruvian’s traditional ají amarillo, potatoes, and beef, “chifa” was created. The Chinese and Peruvian culture and cuisine became so interconnected, that “chifa” dishes became known and loved by all Peruvians.

One of the most well-known chifa dishes you’ll find in all Peruvian restaurants is the lomo saltado, featuring marinated sirloin steak wok-fried with onions, tomatoes, & garlic, and served with fried potato wedges (or French fries believe it or not!) and a side of rice. A savory, stir-fry masterpiece!

Cantarito’s Peruvian Week Spotlight: Causa de Pollo

As our appetizer for Peruvian Week, causa de pollo is an iconic Peruvian dish with pre-Colombian roots. The word causa comes from the indigenous Quechua word “kausay,” meaning “life” or “sustenance,” and the name was solidified in the 19th century when women prepared this meal for soldiers during the War of the Independence, coining it “por la causa” (for the cause). It’s therefore become quite the patriotic dish for Peru!

While there are different variations, causa de pollo consists of mashed potato with ají amarillo, layered in with avocado, shredded chicken & veggies, and topped with tomatoes, olives, hard-boiled egg, and a mayo-based sauce.
