Cantarito’s Peruvian Week Spotlight: Lomo Saltado
Peru has a very rich culinary history, and one style of cuisine that is quite popular is called “chifa,” which is a Chinese-Peruvian culinary fusion. In 1849 and for the following decades, there was a steady influx of Chinese migrating to Peru. With the Chinese flavors of umami, ginger, scallions, and sesame oil paired with Peruvian’s traditional ají amarillo, potatoes, and beef, “chifa” was created. The Chinese and Peruvian culture and cuisine became so interconnected, that “chifa” dishes became known and loved by all Peruvians.
One of the most well-known chifa dishes you’ll find in all Peruvian restaurants is the lomo saltado, featuring marinated sirloin steak wok-fried with onions, tomatoes, & garlic, and served with fried potato wedges (or French fries believe it or not!) and a side of rice. A savory, stir-fry masterpiece!
