So when you cut meat on a slicer, you’re left with all these crispy little bits of flavor - call em’ “debris” or “shrapnel.” They’re usually pinched between the thumb and forefinger of a hungry cook before they clean the machine. But we figured they’d be better used folded into homemade mayo with pickles and capers with lots of lemon and added to the sandwich, in this case some turkey we dry-brined for several days and roasted on high heat. Gonna pile it on our bread with lettuce, tomato and avocado.
