We are not an intimidating French restaurant with ridiculous prices, miniscule portions, and heavy butter and cream sauces. Our head chef and co-owner was born and raised in France and has years of experi

ence cooking, and eating, French food. Most of our recipes are family recipes that originate in the south of France and use olive oil and duck fat as bases. The Metro Bistrot’s menu changes weekly, and sometimes daily, according to what is available at the local markets to ensure that we serve the freshest and best local ingredients. Our menu includes a variety of French favorites, including cassoulet, escargot, duck confit, clafoutis, chocolate mousse, and more. During the week, for lunch on Wednesday through Friday, we feature a prix fixe menu that includes a starter, a main dish, and dessert. Our restaurant is BYOB, so grab a bottle and come join us for a delicious French meal and we’ll transport you to France without having to leave Southbridge. Sad news. I was just informed that my good friend of over 40 years, Bill Gajewski, passed away suddenly yesterday after a short run. The wake will be Friday and the funeral on Saturday. He was always a generous and kind friend with whom I had many good meals and bottles of wine and much good tennis. Just the other week he came into The Bistrot, and we had a chance to chat. I told him how his aunt Flo taught me to play tennis (we worked together at The Publick House) with a couple of lessons when I was a teenager at Roseland Park on their white clay courts. He seemed surprised to learn this. I will miss his astonishment and laughter at the casual things I would tell him.

Dear Friends,
I am glad to report that Marie-Paule is recovering well and making diligent progress (not Pilgrim's--she's French). Of course, the weather has been perfect for a recovery from such a surgery. I hesitated to post regular updates until after a week due to my superstition of over enthusiasm and praising "Word of the Good News" near religious hyperbole when it comes to health. My reason, stoicism, and conservatism says, "hesitate" and defer until it can be confirmed. Well, right now, so good, so far. We are on track to reopen The Bistrot on Thursday, septic repairs at the Wells Plaza willing.
And thank you for all of the kind thoughts and prayers for her recovery.

Dear Friends,
Marie-Paule had successful hip replacement surgery on Tuesday. I picked her up from Windham Hospital on Wednesday at noon after an overnight stay. Back home in Pomfret, she experienced pain (typical for major surgery), disorientation, and a long night with me stationed on the couch playing nurse (up helping or fetching every two to four hours). Today she is much better, and her improvement from just one day is noticeable. Thank you to everyone who has inquired after her condition and to all who have included us in their prayers.

We have fresh Chatham bay scallops tonight! These are some of the best scallops in the world especially poached in a light cream sauce and French vermouth with shallots and shiitake mushrooms.

We will be open Xmas Eve, taking reservations from 4 to 7.30 pm. We will be closed on Xmas Day. We will have venison ragout on Xmas Eve.

The Metro Bistrot will be closed until 18 November. Marie-Paule had dental surgery yesterday and will need a couple of weeks of recovery time. This is especially important as there are possible complications from this invasive procedure and the prevalence of Covid still with us. We are being cautious.

We are open and have new dishes. Tonight we have fresh tuna from the coast with an Amoricaine sauce, which is a traditional sauce from Brittany (ancient Amorica, its name before the Romans) for fish prepared by Marie-Paule (her mother's recipe). It goes perfectly with a heavy chardonnay or pinot noir.
