Came across this YELP review of The Plaza Cafe today and saw a comment I have heard often over my 28 years behind my stove: THE BEST KEPT SECRET IN THE HAMPTONS. I think the New York Times was the first to coin that phrase for us way back in the beginning. Back then I thought it was pretty cool. But as the years passed by and I was still hearing that phrase being referred to us, it wasn't so cool any more because it led me to believe that a lot of people did not know about us even though we were consistently one of the highest rated restaurants in the Hamptons according to also Zagat, Newsday, Google, YELP, Open Table....To be honest, it started to take its toll on me as we were not the busiest restaurant in the Hamptons. I kept trying to figure out what I was doing wrong. But over the past few months as I embark on a new venture, I realize that I didnt do anything wrong. I realized how much I love what I do. I realized that I have no regrets as I gave my best each and every day. I realized that I worked with some very incredible people over the years. And I realized how much I appreciated walking my dining room each and every night meeting and talking with the nicest clientele a business owner could ask for. So if this is what it means to be THE BEST KEPT SECRET IN THE HAMPTONS I thank all of you that feel that way for the most incredible journey.

I am surprised as to how many people think The Plaza Cafe has closed. Yes, our space may possibly be torn down, and yes I became involved in a very special new venture this past Spring with my cousin Skip Norsic, but right now I am still behind my stove each and every night that we are open. Please come visit us as you never know if and when we may be serving our last meal as we come up on our 28th year anniversary.

As many of you know I am involved in a New Restaurant Venture in Southampton that is set to open up in early 2025. Its a pretty cool concept and I am starting to put together a very special team. Right now we are looking for an Experienced General Manager with Fine Dining Experience and a Knowldege of Wine. So this crazy idea I had of recreating a unique take on chicken parm came out good enough to make it to our Fall Menu. Long story short, I substituted Swordfish for the chicken and coated it with grated Grana Padana, a little panko and some fresh Thyme. I then substituted Roasted 'Spaghetti' Squash for the pasta and made a Mushroom 'Bolognese' from Lobster Mushrooms to take the place of the marinera sauce. What really makes this dish is the moistness of the crusted swordfish (don't laugh, but its like 'shake and bake'!) and the Unami rich sauce. Sold quite a few of these over the weekend with very positive feedback.

Working on a new dish today at Plaza Cafe that, believe it or not, was inspired by everyone's favorite Chicken Parm. Of course my take on it will be a seafood version with a little play on words. To start, I'm using these beautiful Lobster Mushrooms (named after the beautiful red color similar to that of whole cooked lobsters) to make the 'Marinera Sauce' which will actually be a 'Lobster Mushroom Bolognese' instead. More to come as this dish evolves.

Although we specialize in Creative Seafood dishes with both an A la Carte Menu as well as aChef's Tasting Menu, we also offer a Vegetarian Tasting Menu. Here is our Artisinal Organic Tofu Marinated with a Soy-Ginger Vinaigrette and served with Edamame Puree, Baby Bok Choy, and Finished with a Yuzu Reduction.
