Hey Y'all, I'm back from out west and my new coffee order showed up so let us know if you'd like to place an order!

Since Long Range SAR was so popular I got more organic coffee from Honduras!

I was very impressed with a coffee from Tanzania that's got a great chocolaty factor and a touch of spice. It benefits from a little rest time, 3-5 days after roasting is what we find works well.

We also have a Colombian coffee that is pretty interesting. It’s a washed coffee with extended fermentation in water tanks (36–48 hours) to build a juicier, more vibrant profile boosting the fruity flavors. Its not natural process wild, but for a washed coffee it's fruity over chocolate/nutty and pretty complex. This one is better at cooler temps, those complex flavors become more distinct.

Roasting today has me thinking...We get a lot of questions about why coffee has different flavors. Some coffees taste chocolatey and smooth while others taste bright and fruity? A big factor is the altitude at which the coffee is grown.
At lower elevations, around 1000m above sea level, coffee trees grow faster, so the beans tend to be softer with simpler flavors Cozy, nutty, chocolate notes and a heavier or fuller body.
Higher up in the mountains, 1500m-2000+m above sea level, cooler temps slow the growth of the cherries down. That slow growth creates denser beans packed with sugars and flavor compounds, which can turn into vibrant acidity and complex notes like citrus, berries, and florals in your cup. Personally I like coffees that are grown somewhere in between 1000 and 1500 m. I find that the flavors are balanced not overly fruity or acidic but still some complexity to the flavors.

G-day coffee connoisseurs! As we are getting up and running in our new location we felt it important to outline our business model.
We almost exclusively roast single origin coffee from small farms producing clean high quality beans.
We choose roast levels to accentuate the origin flavors which is why you will notice most in the light (city) to medium-dark (full city+) range. Too dark and the unique flavors are burnt out.
Our current plan is to roast one day each week and only roast enough coffee to fulfill the orders we receive. That means your coffee is never sitting on a shelf going stale — it’s roasted fresh specifically for you.

Our current green coffee inventory available to roast is posted in the image below for reference. Each bag is 15oz of whole bean.

Fresh coffee tastes better — and we’re committed to delivering premium whole bean coffee at its peak, however, to get the best flavor it's recommended to let the coffee rest for 3-7 days before brewing depending on the roast level and variety.
