Just another completely normal day at Dark Horse: Amy Pimental doing her thing as our resident Crazy Cheese Queen
 and John Pimental lurking nearby waiting to collect his cheese tax. 🧀

We have spent a whole lot of years doing two things people generally advise against: Being married AND working together. 😂

And somehow
 we actually really like it. Most of the time. 😉

But that’s also a pretty special part of Dark Horse. This really is a family business. We work side by side, bounce ideas off each other, occasionally drive each other nuts, laugh A LOT, and apparently steal food directly out of each other’s hands.

No script. No setup. Just Amy, John, and the very real cost of being married to a butcher: He gets a cheese tax. đŸ§€đŸ„©

The purple shallot is mild, a little funky and VERY tasty!

What an honor!

2026 was our first year being nominated independently as Dark Horse for a Cape’s Best Award as Best Butcher Shop and we were in the TOP THREE! Ring Brothers Marketplace got into the top three for best grocery store AND best catering as well 🙌

We truly appreciate all the love and support we have received from our community. This has been a year of growth, learning and evolving and we are SO excited for what’s next.

👹‍🍳 An annual Dark Horse tradition!

Every Labor Day, we make Johnny’s famous meatballs from a recipe that goes wayyyy back to 2007.

A perfect blend of veal, pork & beef, seasoned just right and expertly rolled by hand into those perfect little meatballs we wait all year for. đŸ€Œ

And if you know, you KNOW.

These bad boys never last long in the case, so Meatball Monday is very much a get ’em while you can situation. 👀

A steak is a steak, right?

Ehhhh
 not exactly.

There IS a reason meat from your local butcher is different from grabbing whatever happens to be sitting in the grocery store case.

And it starts long before we cut your steak.

đŸ„© You know what you’re buying. You can ask us where the beef came from. You can ask what grade it is. You can ask why one steak has more marbling than another. There’s no mystery package and no guessing based on what looks prettiest under the grocery store lights.

đŸ„© Fresh meat should look like fresh meat. Beef naturally changes color when it’s exposed to oxygen. That doesn’t automatically mean it’s gone bad
 it’s literally what meat does.

Some retail meat packaging uses specific gases and packaging technology to help maintain that bright red appearance consumers associate with “fresh.” At a butcher counter, we’re not trying to sell you a color. We’re selling you quality beef.

đŸ„© And then there are the people cutting it. This isn’t a package that showed up ready to be tossed into a case. Our meat is being handled and cut by people who understand the animal, understand the cuts, know what they’re looking for, and have spent years learning the craft.

That means we can tell you what you’re buying, why it’s worth buying, and exactly what to do with it when you get home.

So yes, you can just go to the grocery store for your meat...
But if you’re already spending your hard-earned money on a good steak?

Know where it came from.
Know what you’re buying.

What’s imported. What’s not. What labels actually mean. Why something is suddenly so cheap. What you should be looking for. And, depending on which corner of the internet you land on
 whether the “beef” you’re buying is even beef. 😅

We’re not here to add to the fear.

We’re here to remind you that you should be able to ask questions about the food you’re feeding your family AND get actual answers.

Where did this come from?
What grade is it?
Why does this cut cost more than that one?
Which steak should I buy?
How should I cook it?

Ask us.

Because behind our meat case, there are actual people who know meat. People who cut it, source it, cook it, eat it, and have spent years learning the craft.

There’s something to be said for knowing exactly who you’re buying your food from.

Know where your meat comes from.

You met the Japanese A5. Now meet its Australian cousin. đŸ‘€đŸ„©

Australian Wagyu is officially in the case at Dark Horse and LOOK at that marbling.

If you’ve been curious about Wagyu but aren’t quite ready to make the leap to Japanese A5, this is a really fun place to start.

Australian Wagyu gives you that rich, buttery tenderness and beautiful intramuscular fat Wagyu is famous for, while still eating more like the steak most Americans are accustomed to.

In other words?

This is Wagyu you can actually sit down and eat as a steak.

Unlike intensely marbled Japanese A5, which we recommend enjoying in very small portions, Australian Wagyu generally has a little more balance between beef and fat, so you still get that decadent Wagyu experience without it becoming overwhelming after a few bites.

And with marbling like THIS, you really don’t need to mess with it.

Prima Donna Maturo is an extra-mature, full-bodied Dutch cheese that brings together some of the best qualities of aged Gouda and Parmesan: rich, nutty, savory, slightly sweet, and packed with those little crunchy crystals.
