Two of our regulars-turned-close-friends have experienced a terrible and sudden tragedy. If you have sat next to Josh & Jimmy at the bar, you know just how much family means to them both. We are heartbroken for them and their entire family after the unexpected loss of their nephew, Jack. Reflecting on this glorious final day of August:
This is a very Josh dish, which is to say it is a very Catbird dish. The boiled peanuts are processed for days and then shucked by hand. They are completely ridiculous and completely delicious. The grits are the best you will find. And please don’t make me explain the XO sauce and what he does to the scallops in order to achieve said condiment.

All of this, and we had the gall to call the entree “monkfish”.

Sometimes you’ll hear Jessica and I calling across the restaurant asking if we have another quart of Burna Boy for the Fatty B, or possibly just shouting “SAAAAMPLE!”

When you work with the same people long enough, you start to develop your own language. Drinks and dishes get nicknames, nicknames get nicknames, and eventually you’re communicating entirely in code.

It’s kind of like naming your dog Spot and, six months later, exclusively calling him Gregory Fluff Pants the Third. There is absolutely a logical progression, it just requires following the entire stream of consciousness that happened inside your own brain. Or in our case, OUR (shared) brains.
