Quick announcement - We just want to let everyone know that we will not be hosting an Open Mic Nite this Thursday. We're taking a long overdue family vacation and will be out of the state until September 13th. Tonight!!! Open mic and doors open at 5:30
Menu: I think you guys are going to like this🥰 EVERYTHING is homemade..... And, it's a fusion between myself and my daughter, Kaitlinn's recipes.....

Appetizer: Homemade Pimento cheese served on cheesy biscuit sliders.

Pulled Pork w/ smoked cheddar, homemade slaw, BBQ sauce, homemade candied jalapeños, pickled onions, and rice. $14.95

Beef Steak w/ homemade chimichurri sauce, slaw, pickled onions, Cotija cheese, parsley, and rice $16.95

Hot Honey Fried Chicken w/ guerre cheese, chives, black beans, smoked corn, and rice $14.95

Lamb w/ chimichurri, slaw, pickled onions, parsley, mango salsa, and rice $16.95

Homemade guacamole, homemade black beans, homemade smoked corn, and homemade candied jalapeños are available as add-ons for all bowls.

Dessert will be Key Lime Pound Cake w/ homemade mango gelato.

Open mic night is this Thursday and the doors will open at 5:30pm. We will be serving Chicken, Beef, Pork and Lamb Bowls with Vegies, rice etc.

Long read but worthwhile.... I want to thank everyone for coming in last night to support my daughter and Ben for their Launch of Fork around and fly out Friday!

I appreciate the support from the bottom of my heart and while we had some real issues in the kitchen with her using her own equipment, which was not already in place and tested like mine is, I had so many people tell me that "the wait was worth it!" Her tacos were original, gourmet, and absolutely wonderful. Everyone said that the flavor profile in all the tacos was "kiss the chef" amazing. Please comment on this post if you see it. I'm sure she would be very touched to know that you guys really did feel that way since she was locked in that kitchen for basically the whole night.

She needed that support and I am just so grateful for my town. I am so thankful to have so many gracious and supportive people willing to stand up and help her through her learning process. Some of you know but maybe not all of you but she has had a very hard life. She struggled with addiction for many years, lost her father when she couldn't even be with him when he passed, had to completely rebuild her life after becoming sober and lost many family member relationships during those years. I am so very proud of who she has become and who she continues to struggle to be.
Last night was a very big deal in her life. It didn't go as planned because of the technical issues and she wasn't quite prepared to manage that kitchen in a rush but she pushed through, and the food was definitely not the issue! She has that cooking blood in her :)
While I wish she would have had a profitable and smoother evening I am grateful that she received the grace that Smithville can give! I hope if she decides to do it again that you will come out again like you did last night and show her that "Small town, Big Heart Smithville" welcome.

Texas Smoke Hot Honey Chicken which is House fried chicken, crispy onions, candied Jalapenos, smoked cheddar, hot honey, BBQ sauce, and fresh chives...
Chicken & Waffle which is Belgian Wafle shell, house fried chicken, hot honey, melted maple butter, powdered sugar, and fresh chives
Pulled Pork which is Slow-cooked house pulled pork, signature slaw, candied jalapenos, pickled onions, smoked cheddar, and BBQ sauce.
And....
Chimichurri Steak which is steak topped with house chimichurri, signature slaw, pickled onions, cotija cheese, and fresh parsley......

OK, I’m cooking and getting ready for tonight and I decided to make Keylime pie cause it’s one of my husband‘s favorites. So I’m making Keylime pie and I’m making these beautiful stuffed jalapeños that I’m gonna wrap them in a croissant covering and portobello mushrooms that are a little spicy, but delicious and lasagna and a cranberry pecan salad. So those will be the options and here’s a few pictures of what I’m doing so far.
