We had an extremely busy weekend . We catered 2 events on Friday , a golf tournament for Troy Chamber of Commerce and that evening we were back for another year of Pioneer seeds field day.
Saturday night we broke out the live fire grill for the Hawk Point Athletic association auction winners. Which just so happen to be some folks we know. So due to their extremely kind bid , we invited them out to the Big Timber Cocina to have their dinner . It was a great time and gave me some practice on the new grill.
We made ribeye steaks and shrimp for the entree . Grilled shrimp quesadillas with a grilled shrimp topper for an appetizer. Sides included roasted potatoes , squash and zucchini medley , bacon wrapped asparagus, Cajun mushrooms and bacon , and green beans. We topped it off with grilled cinnamon sugar pineapple for dessert.

The name may say “bbq and Tex-mex” but we are way more than pulled pork and tacos!

The best meals aren’t just eaten . They are experienced.

I know we have dropped some teasers about big things coming this year. Well one of them is here and we are loving it.
Let me introduce to you our fully custom live fire pit. It’s made for a cooking experience, more than just a meal.

We will be offering this as an option on our catering menu in the months to come. It will be for more intimate gatherings to start with , probably 30 or 40 people.Then we may be able to expand once we get everything dialed in.

That being said, we will be offering this at a very discounted price to anyone who is interested in trying it out, so we can get some reps under our belt before head out into the world. We prefer around 10 to 20 people to start with.

So if you having a small get together and are interested in our live fire experience reach out and we can go over some details.

They say size doesn’t matter , but as men , we are often judged by the size of our tongs. By men and women alike. They will see us with our tongs out and say things like , I thought it would be bigger, or I don’t feel like he is using his tongs to their full potential, or he can barely even flip that meat with those little tongs .

That’s why I had to step my tong game up and get the Donkey Long Tongs. Now I have the biggest tongs at the party! They even have a bottle opener where you can hang them , but be careful if it’s windy , you don’t want too many swinging tongs around , or it may get awkward!

These are actually just part of a new addition to our lineup that you will be seeing very soon.

We are only 5 months out from Christmas party time! 🎅🏽
With Christmas being on a Friday this year , the weekends in December are extremely limited. I would recommend booking your dates ASAP, because once they are booked , they are gone forever! 😬

This crazy lady called us from a pay phone in a saloon in Homer, Alaska to make sure her Christmas party was booked!

Better safe than sorry!

Are we a food truck? We certainly are not! But we can slang food truck style grub with the best of them !
Maybe someday we will entertain the idea of a food truck or trailer, but for now, we are going to keep on , keeping on.

We had a long busy weekend serving over 400 people at a wedding and grad party! The rain tried , but it couldn’t keep us down. It kept us wet though.
We had to change a few things on the fly to stay dry , but it all worked out .

Since our team put in such a great appearance this weekend , on Sunday we had an employee appreciation float trip! It great to have a good boss and a strong team! 😉

Now it’s time to celebrate America! 🇺🇸🇺🇸🇺🇸

I miss the date every year and this year was no different . We just hit our 3 year anniversary as Big Timber on June 10th!

What a ride it has been this last 3 years. We have learned so much along the way. This is a business of trial and error. So we are always trying to improve the customer experience and improve our set up and service!
As we roll In to year 4 ,we have some huge things already in the works that will elevate our game to an exclusive level. They have to remain a secret at this point , but when the time comes, it will blow your socks clean off.
I have come to the conclusion that catering is a lot like an elephant circumcision, the pay is not great, but the tips are huge. 🤣

Here's to year 4!! May it be the best yet!🍻

This and Pink Pony Club blasting on repeat!

It's the only thing that gets me through these hot Missouri summers standing in front of an even hotter grill!

We are only 32 followers away from 1000, so we thought this sweaty picture of me covered in bbq sauce would be the golden ticket to get us to a grand! Don't disappoint us!

Come hang out with us tomorrow night in Hawk Point and try our world famous pulled pork nachos! 🧀
Or try a pulled pork sandwich, with nacho cheese. 🥪
Or even a hotdog, with nacho cheese. 🌭
Or try our bacon fried corn, with nacho cheese. 🌽
Or just get a bowl of nacho cheese, I don't care. 🍨
We will also be exclusively blasting Nickelback and Creed all evening! Hell yeah, brother! 🤘🏼
