Last week, Paul spent the week at Tales of the Cocktail in New Orleans—one of the hospitality industry’s biggest gatherings, bringing together bartenders, beverage directors, brand ambassadors, distillers, and hospitality professionals from around the world.

Instead of chasing trends, he leaned into the science.

From enzymes and texture to flavor chemistry, distillation, and the role of ingredients in how we experience a cocktail, he packed his schedule with seminars focused on the why behind great drinks.
