Good Morning Foodies,

Regarding Pandora Hightower’s (“Panda”) recent travels for continuing education, you are a very well-traveled group! From the pictures in the post, several of you correctly identified what city she had travelled to and a few of you even discerned what culinary school she attended!!

She traveled to the Cambridge School of Culinary Arts in Boston to learn more about realistic fruit-shaped entremets. Look for these in the display case in the coming months!

Where is Panda! (Pandora Hightower)

Lead Pastry Chef Pandora is out of the shop for a few days taking in some continuing professional education (learning some cool things at a culinary school!). At North Shore Boulangerie we highly value learning — that’s why we’ll pay travel and education expenses for our chefs to learn new techniques. It’s great for the chef, great for our kitchen, great for our customers and great for the overall food community here in Milwaukee!! It’s a win, win, win, win!

From the pictures below, if you can accurately identify which city (metro area) that Panda flew to, we’ll enter you into a drawing for a $25 gift certificate.

Good Morning Foodies,

Since Brian Kramp and FOX6 News Milwaukee did their morning show from our production facility and spent time with our head croissant maker (Sean Cassel), we’ve received a lot of DM’s asking about him!

He’s a great guy with a great back story: Sean is a 3rd generation baker and started his career in high school at Bay Bakery in the Village of Whitefish Bay. (Who on the North Shore can forget Bay Bakery’s Fruit Tarts: you could not go to a picnic, block party or dinner party without finding these delicious creations!). Sean would work a full baking shift BEFORE classes!

As his career progressed, he trained in some of the best bakeries in town. We’re very pleased that he’s made North Shore Boulangerie his bakery home.

Pictured below is Sean with his partner Shannon and their 4 beautiful children.
