From the early morning prep to the last order of the night, it takes a hardworking crew, dedication, and teamwork to keep a family business going strong.

For nearly 40 years, our team has been showing up for the Shirley community—and we're grateful for every employee, customer, friend, and family member who has been part of the journey.

Frank takes us behind the scenes of Carlos Pizza's tomato sauce and keeps it real.

When the garden is producing, we use our homegrown tomatoes. When we need more, we support local farms right here in the area.

And when the colder months arrive? We don't pretend tomatoes grow year-round. We source quality canned tomatoes from California and Italy until the next growing season.

Because quality isn't about pretending everything comes from your backyard.

It's about being honest about where your food comes from—and never compromising on what goes into the pot.

**The next generation is already writing the next chapter. ❤️🍕**

Family has always been the heart of Carlos Pizza.

Today, Frank shares how his children have each found their own path while continuing to support the family business.

Gianna helps keep everything running smoothly at the pizzeria whenever she's not in school. His oldest son, despite owning his own business, still spends weekends helping with deliveries, catering, and lending a hand in the shop. His middle son has focused on sports and education, carving out his own journey.

Frank doesn't know what the future holds—or who may one day carry on the family business—but that's okay.

What matters most is that the values, traditions, and memories continue to be shared with every customer who walks through the door.

Rosa shares what it was like raising three children while helping at the pizzeria—driving them from school and football practice straight to work, where family and business became one.

She also talks about another family tradition that's just as important.

The garden.

What began with her father continues today as Frank grows tomatoes, zucchini, eggplant, basil, and more after Manny's back injury made it difficult for him to continue farming.

Every September, the family gathers to make hundreds of mason jars filled with homemade tomato sauce—a tradition that's been passed down through generations.

It's more than gardening.

It's preserving family, tradition, and the flavors that make Carlos Pizza special.
