Let’s talk about gluten!

Gluten is the protein in wheat that gives bread its stretch, strength, and structure.

When we mix, stretch, and fold our dough, we’re basically giving that gluten network a workout.

Just like a muscle gets stronger with training, the gluten network becomes stronger and more organized as we work the dough.

Then we let our sourdough rest and ferment for hours.

That long fermentation changes the dough and breaks down some of its components including some gluten proteins.

Sourdough isn’t gluten-free but surely it’s gut friendly!

What makes our bread:
🌾 Organic flour
💧 Water
🧂 Salt
⏰ Time
And they are baked directly on stone!

Real bread isn’t rushed.

Still wild-caught, still sourdough beer-battered, still crispy and served with fries… just a whole lot more fish on your plate. 😋

FISH & FRIES ONLY! 🐟🍟

(No sandwiches tonight — we’re still short-staffed.)
Meanwhile, Naftha will be in the kitchen baking bread for tomorrow’s farmers market because apparently she has decided sleep is optional. 😂🍞

Come hungry. We’ll have the big fish ready for you!

THIS IS WHAT SUMMER TASTES LIKE!

Juicy, beautiful heirloom tomatoes from Sterling Springs Farm in Shelbyville, layered on our crusty organic sourdough.

Nothing fancy. Just in season-ripe on vine tomato, really good bread, and that taste of summer you can’t get from a grocery store.

Come eat at the dock, soak up the sunshine, and enjoy it while these tomatoes last!

I thought we would be okay today…

But unfortunately, we’re not quite there yet.
Earlier this week, the little ones in our family got sick. We did everything we could to help everyone get better, but it looks like they need a couple more days to rest and recover.

Unfortunately, half of our kitchen staff called in sick as well, and they’re dealing with the same thing.
So, we’ve decided to close for the day and let everyone rest and recover. We’re taking it day by day and monitoring how everyone is doing.

We’re truly sorry for the inconvenience, and we really appreciate your patience and understanding while our little crew gets back on their feet

Starting this week, we’re simplifying our hours to Friday–Sunday, 11 AM–3 PM as we make our way back to homeschooling our kids and creating a little more balance for our family.
