Shaping is very important in sourdough because it helps the dough develop enough strength and structure to hold all the gas produced during fermentation.

Think of it this way: fermentation creates the air bubbles, but shaping helps the dough hold onto them.

Good shaping:
• Builds surface tension, helping the loaf rise upward instead of spreading out.
• Keeps the dough’s internal air pockets intact.
• Gives the bread a better shape and height.
• Helps create a beautiful open crumb with larger, irregular holes.
• Makes scoring easier and helps the loaf open nicely in the oven.
• Contributes to that beautiful, professional-looking sourdough crust.

If the dough is shaped too loosely, it can spread and bake flat. If it’s shaped too aggressively, you can push out the precious gas bubbles you’ve worked so hard to develop.

The goal is gentle handling on the inside and good tension on the outside. That is one of the secrets to really beautiful sourdough. 🍞✨
