🔥 MARLOWE’S SMOKEHOUSE — RECIPE OF THE DAY 🔥
🍗 EASTERN NC SMOKED CHICKEN 🍗
Juicy smoked chicken, a little char, plenty of smoke, and that Carolina vinegar kick! This one is simple, Southern and packed with flavor.
🥩 WHAT YOU NEED
• 4 chicken leg quarters or 4 chicken halves
• 2 tbsp SPG seasoning
• 1 tbsp paprika
• 1 tbsp granulated garlic
• 1 tbsp onion powder
• 1 tsp black pepper
• Hickory or your favorite smoking wood
🌶️ CAROLINA VINEGAR SAUCE
• 1 cup apple c***r vinegar
• ½ cup white vinegar
• 2 tbsp brown sugar
• 1 tbsp Texas Pete
• 1 tsp black pepper
• 1 tsp crushed red pepper
• ½ tsp salt
🔥 HOW TO MAKE IT
1️⃣ Season the chicken generously and let it sit for at least 30 minutes.
2️⃣ Fire up the smoker to 250°F.
3️⃣ Smoke the chicken until the thickest part reaches 165°F minimum. For dark meat, taking it closer to 175°F can give you more tender results.
4️⃣ During the cook, lightly mop the chicken with your vinegar sauce.
5️⃣ Let the chicken rest for 10–15 minutes.
6️⃣ Hit it with another splash of Carolina sauce right before serving.
🔥 THE MARLOWE’S TIP:
Don’t drown good smoked meat in sauce. Let the smoke do the talking and use the vinegar sauce to brighten up the flavor.
Serve it with slaw, hush puppies, baked beans or mac & cheese and you’ve got yourself a Carolina plate!
