This soup is holiday perfection! 🍅✨ Nothing is more comforting than Tuscan Tomato Bisque!
This recipe from Chef Lisa Dahl's "Elixir of Life" cookbook is what we'll be serving on Christmas Eve here at Pisa Lisa as well as Chef Lisa's other incredible restaurants. This soup is pure comfort on a cold winter night, although it gets compliments from our guests all year long. On a festive December night, this Tuscan Tomato Soup is about as delicious as anybody could ever want! 🎄
Ingredients:
- 2 large carrots (about 8 ounces)
- 2 large fresh shallots
- 4 to 5 cloves garlic
- 1⁄2 cup extra virgin olive oil
- 1⁄4 teaspoon crushed red pepper
- 1-ounce fresh basil, chopped (1⁄2 cup packed)
- 2 29-ounce cans San Marzano imported tomatoes in juice with basil
- 2 tablespoons pesto (optional)
- 8 cups chicken or vegetable broth
- 1⁄4 teaspoon black pepper
- 1⁄2 to 1 cup cream (optional)
