While I’ve said many times that my mother’s presence is felt throughout my restaurants, my father’s influence is just as strong. He is the reason I have live jazz at Dahl & Di Luca, and why I love bringing people together around a table. His influence is also part of the reason I eventually opened a pizzeria, and on the menu at Pisa Lisa I document how a childhood memory with him inspired the restaurant’s name.

One of my favorite pizzas on the menu, topped with sausage and caramelized onions, and inspired by his Chicago roots, is named “Da Herbie” in his honor. Every time I see one leave the kitchen, I think of him and smile.

Pizza can be very straightforward to make. If you have good dough and a good oven, then you should be able to make a great pizza at home. That’s especially true given that Chef Lisa's pizza philosophy is "less is more." Chef Lisa learned this when she was first in Rome and fell in love with the Roman-style pizza. It has a more substantial crust compared to the trendier Napoli style, but that crust was so impactful. She remembers thinking, that crust, with only tomato sauce and olive oil, was the "best thing I've ever tasted."

So when Pisa Lisa was born, Chef Dahl knew she wanted to focus on using fewer toppings and paying more attention to detail. The Semplice was the first pizza on the menu at Pisa Lisa. It paid homage to that experience she had in Rome. It didn't even have cheese, so you could enjoy the simplest form of pizza. Using too many ingredients on a pizza collapses the delicacy of the crust, which is the canvas. And the canvas is like the cradle. You can have 50 things on a pizza, but it ain't going to make it any better. Chef can make a pizza with our dough, our cheese, a little olive oil, and a touch of rosemary that is as heavenly as any complicated pizza, anywhere. As Chef Dahl has always said, "if you get a great Margherita, you will never forget it."
