In specialty coffee we focus so much on our coffee farmers that we can forget to highlight the farmers here at home whose work is equally vital to the life and richness of our cafes. One of the farmers we rely on is Georgie Smith. A 4th generation farmer whose garlic, produce and heirloom beans are staples of the Seattle restaurant pantry. If you've ever eaten at , you've had Georgie's produce. In fact, if you've dined at any chef-driven restaurant in Seattle, you've had Georgie's produce. It's impossible to quantify her contribution to local gastronomy over the lifetime of Willowood Farm. Two nights ago, Georgie's main barn housing essential farm equipment, produce storage and processing, and seed germination activity was burned to the ground. It's a devastating loss at a critical time of the season. She and her family are raising money to rebuild and save what they can of their coming year. All over the world, farming is a subsistence living and here in our country is no different. We have to support the farmers we care for because without us, they can cease to survive. For International Women's Day we are supporting Georgie and her family however we can. Introducing Alcides Avendaño, a quality driven farmer in the Huila region of central Colombia, and a premium producer of the Coocentral Cooperative. This coffee is so, so special to us. It is the result of a relationship we've been building with a new specialty importer (more on that later) and really reflects the values we care about including farm-level sustainability, community vitality at origin, long term farmer livelihood, the human role in global agriculture, and relentless dedication to cup quality. We love this coffee so much that we bought the ENTIRE season's harvest from this farm. This is the single biggest purchasing commitment we've made so far as a company and one we hope will allow Alcides and his family to continue producing exceptional coffees for years to come.

In the profile we find ripe fig, Muscat grape, rosé like tannins and a cloyingly sweet, maraschino finish. Starting next week you can find it on our website and in store. If you're a subscription holder, you'll see this beauty in your mailbox after the 1st. What a way to welcome spring.

WELL WHAT DO WE HAVE HERE. A perfect little cake made from Washington cornmeal, fermented coconut milk, salt, fat, time. No gluten, no sugar, no faux flours, no weird binders. In other words, a gluten free, vegan pastry that doesn't taste like already-chewed cardboard candy. You're welcome.

This weekend's special is a needlessly complicated version of beans on toast made entirely with produce bought at the Capitol Hill Night Market. Wildwood farms cranberry beans briefly smoked over apple wood and then made half into a purée before poaching the rest in a brine of olive oil, farm garlic, fresh herbs and champagne vinegar.
Then, because we are masochists, we salt roasted some Old Chaser Farm sunchokes and also made tiny chips out of them for "fun". Oh and we're bringing in this Spanish soft sparkling water now because Topo Chico started tasting weird in the last couple months which I guarantee absolutely no one notices or cares about except us but in case you do, here it is.

2016 was a breathtaking year for us. We're so grateful for the amazing community of people who have supported and embraced us. We are closing from January 1st-6th, reopening the 7th with more sleep, a new menu and 12 months of killer coffee ahead. We can't wait to share what we have planned. Thank you thank you thank you. Starting a series of warm winter specials with our take on middle eastern Fatteh. We culture our house made coconut yogurt for several days until it's rich, dense and tangy before adding it to stewed chickpeas, cumin, lemon, garlic and Aleppo. Warm, savory, smoky, tannic.
Roasted Tokyo turnips tossed in miso and some cultured butter (also house made, also vegan, always) over some braised kale and turnip greens.
I feel about this dish the way I think other people feel about drugs.

You've probably seen Kayon Mountain in season at a few local shops right now because it's a fantastic coffee but also because it's one of the few directly traceable lots out of this region that is sold directly to green buyers instead of through the Ethiopian Commodities Exchange. For more info on why that's important, check out our website profile for this guy, which is practically a dissertation.
Juniper, lilac, gamay grape, bergamot, burnt cane sugar. Not burdened by the loudness some natural coffees can possess, particularly those from Ethiopia. Elegant, restrained, understated, but full of life. Like so many of the great ones are ☔️🍇🍆👾🌉🔮☯☦
