Jack Timmons grew up in Texas and has lived in Seattle for the last 3 decades. In 2012, he attended BBQ Summer Camp at the Meat Sciences department of Texas A&M, then toured many historic barbecue temples of Central Texas. Returning to Seattle, he bought an offset smoker, imported some post oak, mesquite and hickory, and started the Seattle Brisket Experience. After more than a year of practicing

the art of barbecue, and serving old-school, succulent smoked meats to thousands of Northwest BBQ fans at BBQ raves, Jack opened a restaurant in the S**o region of Seattle – Jack’s BBQ.

If you see this ’77 Cadillac Eldorado cruising through your neck of the woods, giddy up and follow it on over to Jack’s BBQ for some ’cue!

We recently had a ton of work done to this beauty thanks to Randy at Scoville Motorworks — a new hand-sewn top, cowhide interior accents, fresh paint, and matching hubcaps to boot.

Keep an eye out for that BRISKET plate. 👀

What kind of wood do you smoke with? We get this question all the time - at Jack’s BBQ we’re cooking with post oak imported from Texas. We’ve tried hickory, mesquite, and even pecan back in the old days. But this post oak burns even, smooth, and clean which helps a ton when you’re cooking on pits as big as these.

Good barbecue starts with great wood. And around here that means post oak.
