From high school pizza gigs to running Seattle kitchens, his journey started with family, cooking shows, and recreating dishes from childhood. His biggest lesson? Mistakes are great. Go-to knife? A nakiri or a 6–8” chef’s knife. Hospitality journey in one word: Chaotic.

ITSUMONO ❤️ we love this place. The food, the vibes, Soju, THE PEOPLE! Restaurant life is weird, you miss a lot of time away from your family, you work odd hours, you don’t have weekend off but sometimes you meet people who are YOUR PEOPLE and it fills you up in ways that you didn’t know was possible. It’s not about accolades or accomplishments or articles or or or. It’s just about community. has cultivated such a dope ass community in Seattle and the ID and we love them for it. SEAHAWKS! Open in Seattle & Tacoma this Sunday to cheer on our Hawks! Seattle preorders open Saturday night at 9pm and we’ll be there reg hours (4-8 pm). Biig Biird will be open at Beer Star in Tacoma from 3-7 pm. 🏈1️⃣2️⃣🔥🔥🔥🎉🎉🎉🎉

Happy holidays, fam and friends! In Seattle, we’ll be closed for a few days this week and next. Unfortunately we still don’t have an update about Tacoma but as soon as we get the word, we’ll let you know! Sending good vibes and holiday cheer to you and yours ❤️❄️🍗

The good news is that we’re open regular hours in Seattle and would love to see you and feed you! Come through for dinner, get some takeout, enjoy some sides and thighs. 🫶🏽

The bad news is that we’re still closed in Tacoma and we’re not sure when we’ll be able to open. We’re hoping soon (tomorrow feels like wishful thinking) but can’t share for certain when that will be. Thanks for riding with us! Biig Biird will be back as soon as we have our permanent permit. Here’s the thing about owning a small business. Sometimes you try your best and you fill out 17 million forms and you do the things that you’re supposed to do and then you just…. Wait. And. Wait. And wait? And it’s casual. And 🫠😩😭😩😩😩😩😩😒😭😭😭 frustrating.

So. We’re closed in Tacoma for the rest of the week. We’re waiting on our permanent permit from the Health Department. We were *hoping* to have it before this week started but we don’t so we’re just kinda waiting.

Thanks for your understanding and patience! Hopefully *fingers crossed* we’ll be back next week with regular business hours.
