From the bottom of the ocean, comes one of Japan’s most prized winter delicacies. 🌊 Now in season, Matsukawagarei, or Matsukawa Flounder is a rarity at sushi restaurants with its short season. Considered the King of Flounder, it is an expensive flatfish and considered a luxury. It’s one that is a must try on any sushi lovers list! ❤️ The firm flesh is aged by our chefs which increases the subtle umami, adding to the clean and refined flavor and slight bit of sweetness. Our Sushi Bar Omakase always has a few seasonally inspired non-sushi dishes. They are chef specialties based on expertise in a wide range of kitchens in Japan and elsewhere.

We currently present three dishes that have been leaving guests very satisfied and very happy!

1) Firefly Squid Tempura – seasonal firefly squid that is prepared tempura-style with our signature batter, alongside rapini and a delectable creamy tofu mash.

2) Red Snapper Soup – our own meticulously prepared Dashi Broth with matcha and cashew nut tofu on the bottom, topped with a beatufiul piece of prepared red snapper.

3) Fried Mackerel – King Mackerel is delicately fried and served with a memorable white onion sauce.

We are excited to bring in Kochi (flathead)! Not widely available in Seattle, we are lucky enough to bring this premium white fish to Shiro’s. Often called “summer fugu” for its firm, chewy texture, our chefs know how to prepare it – cured with kombu and salt to soften the texture which is the most popular and best way to enjoy this fish!

Our chefs are constantly sharpening their skills (and their knives🔪)! Come visit us and let them show you how to best enjoy Kochi nigiri. 🍣

Thank you to all that entered our Sushi ID Quiz! We received lots of answers – mostly right! The fish in the photo is tuna, and the Japanese name is Maguro. It is also sometimes called Akami when prepared as nigiri sushi or sashimi, to distinguish it from chutoro or o-toro, which are also tuna. 🍣

We are extending our Happy Hour menu to every night this week, from open to close through May 10!

Our entire happy hour menu is available at happy hour prices, including the star – our 19-piece Chef Choice Sushi Course ($70)! You can also enjoy tempura, miso soup, chawanmushi (with uni option), and drinks starting at $6, including Sapporo, sake, and wine options! 🍻🍶🍤

Happy Hour Week is available only in the dining room. Please make reservations to ensure availability at shiros.com.
