Bringing authentic shawarma to Seattle has always been a dream of ours. In October 2019, we signed our lease at Aviv Shawarma Bar with our 5-day-old baby in arm. We were committed to making this dream a reality, and nothing was going to stand in our way. We all know what happened next. And finally, after two years of fighting for this place with every cell in our bodies, we have closed our doors for good.
Covid Sucks. That could very well be the only moral to this story, but it is not. Read this story as one of perseverance. It’s a story of pushing forward and pivoting; taking a risk and knowing when to call it. It’s a story about being blessed with family and friends who are there for you in the moments of building, and those of breaking down. It’s a story with surprise ending, but one we are getting behind.
We built something incredible that we still believe in— and have spent the last weeks dismantling it piece by piece. We are sad, but we would be lost if we didn’t remember “there is some good in this world, Mr. Frodo, and it’s worth fighting for.”
Shalom, Shawarma Bar. We might try again one day, but until then, come say hi at Aviv Hummus Bar, still going strong on 15th.
