We had a great time as a Vendor for the Midsummer Scandinavian festival in Astoria doing the Friday night dinner. On the menu :
Laxlåda
A traditional Finnish dish with layers of smoked salmon, potatoes, salmon lox, sweet onion and dill cream sauce topped with pickled red onions and capers.
Kaalilaatikko
A cozy Finnish cabbage casserole. Slow-baked green cabbage folded with savory seasoned ground beef, onions, and rice.
Sisu Spent Grain Bread
Delicious house baked bread using Sisu beer and it’s spent grain.
Midsummer Garden Salad
Roasted beets, cucumbers, red onion, fresh garden greens tossed with herb vinaigrette and feta cheese.
Mustikkapiirakka
Finnish Blueberry Pie
Fresh Blueberries buried in a creamy, yet slightly tangy, custard filling, on top of a cardamom sugar cookie-like crust.
