Why Your Food Sucks!
Check in every Monday as we offer unwanted free advice to our “competitors” to help them understand why our food is so much better than theirs and how they can correct course!
VOLUME 1: YOU’RE SERVING IT TOO HOT
You worked hard. You plated it beautifully.
Then you sent it out at approximately the surface temperature of the sun.
Here’s the problem: when food is too hot, your customer’s first impression isn’t flavor—it’s HEAT.
Your tongue has different taste receptors spread throughout the tongue, but that old-school “sweet in front, bitter in back” tongue map? Mostly a myth. Taste receptors for sweet, salty, sour, bitter and umami are distributed across the tongue.
🌡️ Temperature matters.
🔥 Too Hot: Heat and pain receptors dominate, making delicate flavors harder to perceive.
♨️ Very Hot: Subtle flavors and aromas can get overwhelmed while the customer waits for their mouth to recover.
👌 Warm/comfortable: Your taste system can actually evaluate the food instead of fighting for survival.
❄️ Too Cold: Cold can also suppress flavor perception and aroma.
The lesson: Hot food ≠ better food.
Give it a moment. Let the dish settle. Let the flavors show up before your customer needs a lawsuit and a glass of ice water.
