Went to the Circle Giant Farmers' Market and I absolutely love making recipes from these fresh produce out of it, this was one of my favorite salads yet ♥️😋 Circle Drive-In

🍤Grilled Shrimp & Juicy Sausage Garden Salad

☀️A fresh, protein-packed salad loaded with crisp vegetables, juicy shrimp, savory sausage, and a light olive oil vinaigrette.

🌿For the Salad
1 cucumber, thinly sliced
2 ripe tomatoes, chopped
5–6 radishes, thinly sliced

🦐For the Protein
½ lb fresh shrimp, peeled and deveined
2 juicy smoked sausages, sliced into rounds

👉For the Sauté
½ white onion, diced
2 tablespoons fresh chives, chopped
1 tablespoon olive oil

🫙For the Vinaigrette
3 tablespoons extra virgin olive oil
2 tablespoons sugar-free vinaigrette (or apple cider vinegar/red wine vinegar)
1 teaspoon Dijon mustard
1 garlic clove, minced
Salt and freshly cracked black pepper, to taste
Optional: pinch of red pepper flakes or paprika for a little kick

❤️Fresh, colorful, and packed with island-inspired flavors! These crisp lettuce wraps feature buttery baked bluefish topped with tropical fruit salsa, fresh tomato basil topping, and creamy crumbled white cheese.

🐟 Baked Bluefish
Ingredients
Bluefish fillets
Butter
Olive oil
Juice of 1–2 limes
Teriyaki sauce

Directions
Preheat oven to 375°F (190°C).
Place bluefish in a baking dish.
Drizzle with melted butter, olive oil, fresh lime juice, and teriyaki sauce.
Bake for 15–20 minutes, or until the fish flakes easily with a fork.
Break into large bite-sized pieces for the lettuce wraps.

🥭 Topping #1 – Tropical Mango Pineapple Salsa

Ingredients
Diced mango
Diced pineapple
Diced red bell pepper
Diced cucumber
Fresh lime juice
Pinch of salt
Sweet chili sauce
Chopped fresh cilantro
Directions
Mix all ingredients together in a bowl. Chill for 10–15 minutes to allow the flavors to blend.

🍅 Topping #2 – Fresh Tomato Basil Mix

Ingredients
Pickled red onions, chopped
Diced tomatoes
Fresh lime juice
Shredded fresh basil 🌿
Crumbled white cheese

Directions
Combine the pickled onions, tomatoes, lime juice, and basil. Sprinkle generously with crumbled white cheese just before serving.

🥬 Assemble the Lettuce Wraps
You’ll Need
Romaine lettuce leaves
Baked bluefish
Tropical Mango Pineapple Salsa
Fresh Tomato Basil Mix
Optional: Sesame seeds for garnish

Directions
Arrange crisp romaine lettuce leaves on a serving plate.
Add pieces of baked bluefish to each leaf.
Spoon the tropical mango pineapple salsa over the fish.
Add the tomato, basil, and pickled onion mixture.
Top with crumbled white cheese.
Sprinkle with sesame seeds if desired.
Serve immediately with fresh lime wedges.

Made another one of these cakes but Keto friendly and gluten free 🩵🫐🌊

🩵Cake Ingredients
2 cups almond flour
¼ cup coconut flour
1 teaspoon baking powder (gluten-free)
¼ teaspoon sea salt
3 large organic eggs
⅓ cup melted coconut oil
½ teaspoon vanilla extract
½ cup mashed organic banana (about 1 small banana)
½ cup organic blueberries, fresh or frozen

🌊Cream Cheese Frosting
8 oz cream cheese, softened
¼ cup unsalted butter, softened
¼ cup powdered monk fruit sweetener
1 teaspoon vanilla extract
1–2 tablespoons heavy cream (if needed)

🫐Ocean Decoration
Natural blue food coloring (spirulina-based or plant-derived)
Organic blueberries
Fresh mint sprigs
