Novem - 9th Anniversary IPA - West Coast IPA, 6.3%
Every anniversary, we find ourselves looking back at everything that got Untold to this point, including the good, the bad, and everything in between. Some days it still feels like we just brewed our first batch (East By Northwest, our first baby) and it’s fun to see how our approach to brewing has evolved over the years. Which got us thinking about this anniversary’s first of four b**r releases.
As we started discussing what we wanted to brew for our 9th anniversary, we kept coming back to a style that has been a huge part of Untold over the years: West Coast IPA. We wanted this b**r to be more than a throwback to our first recipe. We wanted it to showcase everything we’ve learned over nine years of brewing and incorporate some of the new techniques, ingredients, and hop products that have us excited about where b**r is going next.
So to celebrate our 9th year, we introduce Novem: a bright, intensely aromatic, hop-saturated West Coast IPA that delivers everything we love about the style. Brewed with Citra, Citra Dynaboost, Citra Quantum, Simcoe, Simcoe Cryo, CTZ, and Azacca, we went all in on hops. This one is intense and absolutely loaded with hop character.
After 9 years, we take a lot of pride in the fact that we’re still learning, still experimenting, and still trying to make the every b**r better than the last. This one feels like a pretty damn good way to celebrate how far we’ve come.
