Triptych Brewing

Triptych Brewing Brewing the widest variety of beer in the CU area since 2013. Triptych is a locally owned, independent microbrewery located in Savoy, Illinois.

In 2013, we started the brewery to explore the convergence of beer with community. We live for the exploration of emerging beer styles and trends but we enjoy a good twist on tradition too. Each year, this obsession with innovation leads us to brew hundreds of different beers to share with you but only a few will ever return. We brew for the initiated in hopes that more will join our cause for flavorful, tasty, and artfully crafted beer.

MERICA
To celebrate America's 250th anniversary, we looked back to the industrial American lagers that filled taverns and corner bars throughout the Midwest.
Built from months of research into historic brewing records and firsthand accounts from retired brewers, MERICA was brewed with grain grown and malted less than 100 miles from our brewery, Illinois corn, Cluster hops, and traditional lager fermentation. This refreshing American lager has a lightly grainy malt character, firm bitterness, and plenty of history in every pint. 4.2% ABV

Blueberry Blonde is back. Every summer deserves an easy-drinking beer, and this one has been with Triptych since the beginning. Brewed with a simple, clean malt bill and plenty of real blueberry, it pours bright with a fresh blueberry aroma, a touch of fruit sweetness, and a dry finish that keeps you coming back for another sip. 4.9% ABV

Three beers hit the lineup today, and Flour and Fire Pizza will be here serving pizzas from 4:30 to 8pm.

First up is SUMMER IN THE PUB, a brand new English Summer Ale. While rooted in British pub tradition, the style has long embraced newer hop varieties, and we leaned into that with Citra Cryo and Nectaron. The result is a malty, easy-drinking ale with a touch of citrus, a little tropical fruit, a light haze, and plenty of pint-after-pint drinkability. 4.7% alcohol by volume.

We’re also bringing back ANNA MARIA’S AMBER ALE, brewed to mark Anthony and Anna’s upcoming wedding anniversary. Inspired by the very first homebrewed beer Anthony ever made, this American Amber Ale combines Sugar Creek Malt Co. pale and munich malts with a restrained touch of crystal malt plus Cascade and Centennial hops for notes of caramel, grapefruit, and pine. Being a brewery owner is tough, but being married to one might be even tougher. Here’s to the spouses who put up with all of it. 5.3% alcohol by volume.

Rounding things out is NOT GIANTS, BUT COCONUTS, a coconut-and-vanilla riff on NOT GIANTS BUT WINDMILLS. Brewed with milk sugar, coconut, vanilla, El Dorado, and Mosaic hops, it delivers layers of coconut cream, ripe tropical fruit, and dessert-like smoothness. If you’re looking for something a little different this weekend, this might be the one. 7.8% alcohol by volume.

Grab a pint, grab some ’za, and kick off another fantastic weekend with us.

Tonight, Watson's Shack & Rail is here from 5 to 8, plus we’ve got two brand new Imperial IPAs joining the lineup.

WHAT RUCKUS? Can we describe the ruckus? This new West Coast-inspired Imperial IPA is brewed with Peacharine, Riwaka, and Citra for notes of pink grapefruit, peach, lime zest, and nectarine before crashing into a firm, tightly bitter finish. 8.2% alcohol by volume.

DON’T FOLLOW THE LIGHTS is a brand new hazy Imperial IPA brewed with Dolcita, Strata, Simcoe, plus one additional hop with such a diabolical, evil name, that we dare not utter its name here. Layers of lightly dank watermelon hard candy, sweet berry, tropical fruit, and a trailing touch of pine lure you further off the path with every sip. Keep your footing, trust your company, and whatever you do, don’t follow the lights. 8% alcohol by volume.

Grab dinner from Watson’s, grab a beer, and choose your own adventure.

Memorial Day weekend is here, and we wanted to give everyone a heads up that Triptych will be closed on Monday, May 26.

Memorial Day is also one of the paid holidays that every member of our staff receives each year. We believe it’s important to give our team time away from work to spend with family and friends, while also recognizing that the holiday exists for a far more important reason than just an extra day off.

So if you’re stocking coolers, heading to a cookout, or planning to spend the weekend on a patio somewhere, make sure to stop by and grab beer before Monday rolls around. Open tonight until 11pm and Sunday from 12-8pm. We’ll be back at it Tuesday!

It’s Friday, which means two important things: fresh beer and pizza from Flour and Fire Pizza out on the patio tonight.

Also back today, LITTLE SECRET, returning for the first time in nearly two years.

First brewed in 2013, this beer comes from the time before every IPA needed to taste like a smoothie, be 10% alcohol by volume, or come with an instruction manual. Little Secret is an old school Pale Ale built around firm bitterness and classic American hop character. Cascade, Simcoe, Citra, and Nugget bring layers of pine needles, grapefruit zest, herbal spice, and resinous citrus over a lightly caramelized malt backbone. Crisp, snappy, and intentionally not soft.

The original label text still pretty much sums it up: this beer started as something brewed mostly for ourselves and the staff fridge, then slowly became a recurring favorite, at one time, it almost became our flagship beer at Triptych... of course right around that time, the first batches of Dank Meme were also hitting our taps and we all know how that story ends :)

Looking for something to do on this dreary Wednesday? Stop doom scrolling, we’ve got your plans covered. Watson's Shack & Rail is here tonight, and we’re pouring the one and only Batch 1600.

This hazy double IPA is loaded with saturated hop character, bursting with layers of pomelo, candied pineapple, mango, and peach while carrying just enough bitterness to keep everything in balance. Smooth, hefty, and dangerously easy to drink, it was brewed as a one-time experiment to see just how far modern hop products could push saturation and intensity. 9.1% alcohol by volume and available now!

You’ve made it to Friday! Flour and Fire Pizza will be here from 4:30-8pm. Grab yourself a pizza and a pint of a new twist on LEET WHEAT.

WATERMELON LEET WHEAT is an American wheat beer brewed with real watermelon. Named after one of our favorite films from 1995, it nods to the early days of the internet. This version adds refreshing notes of fresh watermelon. Hack the planet. 5.0% ABV
