A little schedule update from the Josie’s crew! ☕️💛

Both our Saugerties & Catskill locations will be closed Monday, September 21st.

With a full weekend ahead celebrating a little wedding milestone 💍 and a lot happening behind the scenes lately, we’re taking Monday to reset before jumping back into the week.

September has been a busy and exciting one for us between opening Catskill, settling into our new routine, and wedding plans getting closer!

Thank you for rolling with us and always being so understanding. We’ll be back caffeinating you soon. ☕️💛

Wedding Diaries 💍💛 Ep. 1

The wedding gifts have officially started arriving… which means the unboxings have begun 🥹

Somewhere between opening Josie’s Catskill, running two coffee shops, and just keeping up with everyday life, we’ve also been planning a wedding — and somehow we are officially TWO MONTHS away. 🤍

Wedding planning definitely took a little bit of a back seat while we poured everything into getting the new shop open, but now that we’re on the other side of it, we can finally focus on all the fun little details we still have left.

Still getting used to opening gifts at home without everyone here, but feeling very, very loved.

Catskill, thank you for such a warm welcome. 🤎☕️

Our first weekend in our new space was everything we hoped it would be. Seeing familiar faces, meeting new neighbors, and finally getting to share this little piece of Josie’s with you meant so much.

To our Saugerties community, thank you for continuing to show up for us and cheer us on as we grow. So many of you made the trip to Catskill this weekend, and it was really special to see you there. 🥹

We’re going to keep things a little slow for the rest of September as we settle into our new space, find our rhythm, and continue adding to the menu.

We’ll be serving your Josie’s coffee favorites, pastries, and a limited selection of overnight oats, warm oatmeal, and yogurt parfaits.

Cooler mornings, golden afternoons, leaves starting to turn, and something warm in your hands - our favorite kind of season has officially made its way to Josie’s.

After lots of mixing, sipping, tweaking, and taste testing, our fall menu has made it to the board!

This season we’re sipping:

🍯 Honey Salted Fig Latte - or make it a matcha!
🤎 Hazelnut Latte
🍊 Ginger Orange Cardamom Chai Latte

Today we open the doors to J2. 🥹💛☕️

It’s hard to believe this day is finally here. So many long days, late nights, decisions, changes, and so much of ourselves have gone into creating this space.

Getting to build it alongside my fiancé has made it even more special. Anthony, Anthony Cunzio, has this incredible way of taking the vision in my head and making it real, and standing here today knowing we created this together makes all of those long days worth it.

Now we finally get to fill it with people. 💛

At Josie’s, coffee has always been about more than coffee. It’s a little ritual - a chance to slow down, connect, catch up, or just have a moment to yourself.

We can’t wait to welcome familiar faces from Saugerties, meet our new Catskill regulars, and watch new routines and memories begin here.

And a little extra love to Glenerie Farm Cut Flowers for the beautiful flowers helping us celebrate opening day. 💐💛

This little piece of paper is looking real good right about now. 💛☕️

Catskill… WE GOT THE PERMIT!!!! And yes, this is exactly how excited we are about it. 💃

After last weekend’s unexpected delay, we are officially cleared and FINALLY opening the doors to Josie’s Catskill THIS WEEKEND!

We told you we were so close. 🥹

We’ll be serving coffee and pastries so come grab a little something, check out the space, say hi, and help us celebrate finally getting to welcome you in.

This is our soft opening, so we’re starting small, settling in, and adding all the little pieces that will make this place feel like Josie’s. We’ve pictured having you here for so long, and now it’s actually happening. 💛

Fall drink testing continues… and we’re happy to report this one went a little better. 😂☕️🍂

Maple Brown Butter. And unlike our Blackberry Sage first attempt, this one earned LOTS of approval in the taste-testing department. 👏

Warm, maple-y, buttery, very fall… she might just have what it takes to make the menu. 👀

We’ve still got more of our fall drink testing to share, but spoiler alert: the testing is officially over and our fall menu drops TOMORROW! 💛🍂

A little behind the scenes at J2… ☕️😅

Turns out opening a second coffee shop isn’t all pretty counters and perfectly poured lattes.

Sometimes it looks like coffee on the floor, equipment in pieces, boxes that still need unpacking + a whole lot of figuring it out as we go.

But somewhere in the middle of all the mess, J2 is starting to feel like Josie’s. ☕️

First up: Blackberry Sage. The idea? We love. The first few taste tests? She needs a little work.

A little opening update from Josie’s Catskill 💛

We were so excited to welcome you through these doors for our soft opening this Sunday, but unfortunately, we’ve hit an unexpected last-minute delay in the final steps of the opening process.

As much as we wish we could welcome you in this weekend, we’ll need to postpone Sunday’s soft opening while we wait for those final pieces to fall into place.

We’re incredibly disappointed, especially after seeing how much excitement and love you all showed our opening announcement, but we are SO close.

We’re sorry to anyone who was planning to stop by this Sunday, and we appreciate your patience as we navigate this unexpected delay.

We’ll share a new opening date as soon as everything is officially finalized. 💛

Thank you for cheering us on, Catskill. We can’t wait to finally open these doors.
