The menu is written. The fish is in. And Chef Terry Tran is getting ready for this weekend’s Omakase Experience in Sushi bā at Singapore Room.

Take a peek at what’s waiting on the cutting board — Otoro, Chutoro, Akami, Kanpachi, Suzuki, Hamachi and more — before Chef Terry turns it into tonight’s 10-course progression.
