The Parting Glass Pub

The Parting Glass Pub Saratoga's Original Irish Pub History:

It is said to be the oldest continuously-run bar and restaurant in Saratoga Springs. Thus derives the name of our pub.
(1747)

Lou Rocco opened the bar formerly known as the “Royal Spring Tavern” (named for a mineral spring beneath the building) which had opened in the early part of the 20th century and put his family name on it going forward

Rocco’s was a full bar serving Italian food and soon became well know for its thin crust pizza. A wall divided the front room into two sections. The Lake Avenue-facing corner door w

as from the old days; installed to allow women to enter (since they were not allowed on the bar side of the room). When it first opened, the restaurant and bar occupied the entire 5000 square feet of open space. As the years passed, Lou Rocco converted the back section to occupy a union hall, a plumbing shop and a carpet shop (with a car garage) in what is now the Dart Hall, with a second bar. The Pub (front room) bar is made of tiger oak, straight grain oak and Honduras mahogany; with a history of approximately 75 years. Its antiquity and beauty inspired the present owners to purchase the property and restore it to its original beauty. It was built in 1936, by Frank K Spalt, who was a personal friend to Gerald King, who lived next door to Mr Rocco. It was built in two months in his garage and brought into the present building in pieces. The Spalt family has a history of cabinet making dating back to 1868. The carved faces on the high front of the back bar represent Father Time as described by the carving of the four seasons, with it as central figure. In 1981, the property was purchased by Joan Desadora and family and established as The Parting Glass — Saratoga’s Original Irish Pub and Restaurant. Since the 1990’s, it received the honor of being voted a Top Ten Irish Pub in the country by USA Today and #3 Irish Pub in the World by Ireland of the Welcomes magazine. As business increased, it expanded into the back room (the Music Room, which has hosted at least seven Grammy winners) and then into the area that is now the Dart Hall. We even sometimes extend the business into the parking lot, where a tent can be erected alongside the outdoor patio. There is a second story that is used for storage, but it is said that Lou Rocco had rooms upstairs that he used for guests. An old Irish proverb states that the last drink of the night is “The Parting Glass.” The beautiful Irish song by that same name wishes everyone a safe journey and joy-after having after having their drink. We celebrated our 38th anniversary on Saint Patrick’s Day, 2019. We are proud to be a part of the revival and continuing success of Saratoga Springs.

A CELEBRATION OF LIFE FOR JOAN DESADORA
February 9, 1940 – August 20, 2026

Thursday, August 27, 2026
The Parting Glass

Please join us as we gather to remember, toast, and celebrate the wonderful life of Joan Desadora.

Joan loved the horse races and the excitement that Saratoga’s track season brought each year. It feels only fitting that we celebrate her during the final week of the racing season, surrounded by family, friends, music, good food, and plenty of cheer.

5:00–7:00 PM - Family & Friends
The Parting Glass will be closed to the public as we welcome Joan’s family and friends for dinner and, of course, Guinness, b**r, and w**e.

7:00–10:00 PM - All Are Welcome
Beginning at 7:00 PM, we invite anyone and everyone who knew and loved Joan to join us in raising a glass and celebrating her life.

There will be live music, pipers, food, drinks, stories, and plenty of celebration.

Rather than paying for food and drinks, we will be accepting contributions to benefit the charities Joan loved and supported. Please consider making a donation in her memory.

Joan loved hosting, celebrating, and, above all, throwing a great party. So please come as she would have wanted us to: in high spirits, wearing a great outfit, and carrying roses as we give Joan a beautiful send-off and celebrate the final week of the Saratoga racing season.

Come raise a glass, share a story, bring a rose, and celebrate Joan with us.

Here’s to Joan — may the music be lively, the Guinness be flowing, and the horses run fast.

It is with heavy hearts that we share the passing of our beloved owner, Joan “Joanie” Desadora.

Joanie was so much more than the proud owner of The Parting Glass. She was a force of nature—a familiar face, a generous heart, and an unforgettable presence in the Saratoga Springs community. She lived boldly, loved fiercely, laughed loudly, and had a way of making everyone who walked through our doors feel like part of the family.

Her spirit, stories, and larger-than-life personality will forever be a part of The Parting Glass. We are incredibly grateful to our customers, friends, and community for the love you have shown Joanie and our family over the years.

Please keep Joanie’s daughters, grandchildren, family, friends, and The Parting Glass family in your thoughts during this difficult time.

In true Joanie fashion, we hope you’ll remember her with a smile, share your favorite story, and raise a parting glass in her honor. ❤️🌹

Raise a parting glass to Joanie. May her memory live on in all of us.

We will be hosting her celebration of life at The Parting Glass. We will share the date shortly.
