Wanna be a Pitmaster classes and certification will be available soon. You'll go through a training period and take a written and practical exam to become certified recognized by the ocba.during the practical exam you will be required to man several smokers with different items on it which require different cooking times. Coming soon smokin chefs say cheese will be offering ribs, brisket, and pulled pork. I currently have two pounds available of the Amish hot pepper cheese and 4 pounds of the jalapeno pepper Jack cheese. Get it while it's on sale for $10 per pound once it's gone the Amish will be $15 per lb and the pepper Jack $12 per lb.
