Don’t waste it on sad chickpeas salads and overpriced influencer pasta.

This is slow-braised oxtail clinging to bucatini like it owes it money. Just enough sugo di pomodoro to keep the Italians happy. Parmigiano falling from the sky. Fresh herbs because we kind of need to keep it classy.

Somewhere, a jar of pasta sauce just filed for unemployment.

Fork it. Twirl it. Shut up for five minutes. Lose yourself.
