Before Kalimera, Chef Ilyas spent years traveling the world as a chef aboard cruise ships, discovering the flavors and traditions of the Mediterranean. Inspired by Greece, rooted in Istanbul, and guided by family, he created a style of cooking that’s fresh, balanced, and unmistakably his own.

Each recipe is crafted with intention, shaped by experience, and made with love. A few of the recipes still come from his mother in Turkey—shared over FaceTime, just as she taught them. Every bite is more than a meal; it’s a connection to home, family, and the memories that inspire everything we serve.
