A note from Chef Nikhil:
When I opened Roux 30A, my goal was simple: to create the kind of restaurant I would want to dine in. A place where guests could gather around one table, share a meal, and experience food that is thoughtful, personal, and rooted in craftsmanship.
To see this passion project selected in The MICHELIN Guide Florida 2026 is both humbling and incredibly meaningful.
While this restaurant reflects my vision, it would not be possible without the people who bring it to life every day. I want to especially thank our Chef de Cuisine, Tim Chyrek, and our entire kitchen and service team. Their dedication and hard work are at the heart of every experience we create.
Thank you to our farmers, fishermen, and purveyors, and most importantly, to our guests. Your support has allowed us to continue doing what we love.
