Where the evening has a soundtrack of its own.

🎶The music, the room, the kitchen come together to create an atmosphere that feels alive and beautifully in tune with the experience unfolding at the table.

Warm soup. Cold sorbet. One sake, two expressions.

Our Golden Heirloom Tomato Soup is built on contrast, temperature, texture, aroma, while IWA 5 remains the constant thread. The strawberries are chosen for aromatic authenticity, not just sweetness. The olive oil adds a floral finish. And the sake, having evolved in the glass since the first course, meets this dish with a newly opened complexity. Don’t mix the sorbet. Cut into it. Preserve the contrast. That’s the point. 🍓🍅

N25 Schrenckii Caviar arrives cool, delicate, and briny, the kind of first bite that immediately makes the table lean in.

Fat Uncle green almonds, new crop potato, finger limes, and goat ricotta blanquette bring texture, brightness, and depth to a course that feels refined, unexpected, and unmistakably Mélisse.

Wolfe Ranch Quail is layered with silky eggplant, earthy porcini, black garlic, aged Comté, and the gentle heat of sansho pepper, creating a rich, savory course that unfolds with depth, elegance, and restraint.

Success can come early in a career, but the real victory is evolution. Learning, changing, refining, and continuing to grow without ever losing your identity, your standards, or your point of view.

For Chef Josiah, that journey led to Mélisse, a restaurant that represents not just where he started, but who he became along the way.

Andy’s Orchard Black Republican Cherry is a study in quiet contrast: deep, sun-ripened cherry, soft chamomile, and the bright lift of yuzu.

Elegant and beautifully unexpected, it is the kind of course that lingers long after the final bite.

Stepping into Mélisse feels like entering a quieter, more beautiful rhythm.

The room draws you in, the kitchen feels close, and every detail seems to whisper that the evening has been prepared with intention, grace, and a little bit of magiс✨

The IWA Pairing Experience 2026 at Mélisse. Two courses. One sake. Two chapters of the same story.

Chapter One: Uni Cromesquis, a traditional first bite rooted in Japan, anchored by IWA 5 at Suzuhie temperature, served to begin with precision and freshness.

Caption 2:
Chapter Two: Golden Heirloom Tomato Soup and Strawberry Sorbet, the same sake, now warmed and aerated, revealing a broader expression alongside peak-season tomatoes, cold sorbet, black pepper, and olive oil.
We return to IWA 5 Assemblage 5 (2023) after another year in bottle. It is more integrated, more composed. And it reminds us: a great pairing isn’t about finding two dishes that work with one sake. It’s about letting the guest witness how one sake can tell many stories.

Don Watson Napa Valley Lamb at Mélisse is a course built on depth, elegance, and quiet intensity.

Tender, refined, and beautifully composed, it brings the richness of exceptional California lamb into focus with the kind of precision that makes every bite feel deliberate, graceful, and deeply memorable.
