At Posa's El Merendero Tamale Factory & Restaurant, we serve old family recipes with a New Mexican twist in historic Santa Fe. Making tamales has always been a family tradition in Santa Fe and the Posa family proudly brings their tamales to you. Posa's tamales begin the old fashioned way, with white corn (posole), which is cooked, ground up, and mixed into a masa dough. The masa is filled with sel

ect mixtures of pork, chicken, cheese, and - of course - red or green chile. A corn husk is wrapped around the tamale and it is then wrapped in parchment and steamed. We even make vegan and vegetarian friendly tamales! We cater, deliver, and serve up our tamales and other New Mexican specialties in house.
