The lamb cassoulet is back at La Tour this Weekend 🤗

Le cassoulet: Where does this delicious regional specialty come from… at the crossroads of peasant family recipes and French gastronomy. Some think that it was created in Castelnaudary during the Hundred Years War. But the introduction of beans from South America did not come until later in the 16th century. In the 13th century came the idea that cassoulet would be inspired by the Arab world and made with leftover sheep and beans. But the recipe is more like peasant culinary traditions. In short, the debate led by the gastronomic critic Edmond Richardin at the beginning of the 20th century ultimately focuses on 3 cities: Toulouse, Carcassonne, and Castelnaudary. Everyone has their own opinion, but that's not counting the other local versions of several villages! We can say that there are many versions of cassoulet, specific to each restaurant chef and his personal know-how. It doesn't matter where the cassoulet comes from, the most important thing is to delight the taste buds, isn't it?

This Thursday and Friday, at La Tour Experience
Lamb cassoulet à la provençale will be served for lunch
Come over and indulge yourself as the weather is getting colder……

All the ingredients used for this cassoulet are local: NM grass fed lamb and local grown tomatoes & onions; at La Tour Experience, We support our local farmers ❤️
