Tonkotsu soup mixed of seafood soup with sardine, mackerel, bonito, and Kombu. Whole wheat thick egg noodles.

久しぶりに魚介豚骨醤油に取り組んでみました。スープはさらに濃厚に。麺も全粒粉やとうもろこし粉などを練りこんでパワーアップしています。ところで、いつも自家製麺を作るときに気を付けていることなのですが、麺と麺に絡んだスープが舌に触れる感覚なども考慮して、麺をすすることで口の中でさらに美味しくなるように麺を作っています。レンゲなどに麺を乗せて食べると、どんな麺でも同じように感じてしまいます。らーめんはやはりすすって食べるのが醍醐味です。ぜひ麺をすするのにチャレンジしてみてください。（Google Translateでうまく英語に翻訳できなかったので誰かよろしくお願いいたします。）

The final installment of the Miyavi trilogy, Miso Ramen Miyavi, features a seafood broth made with three types of shellfish: sushi-grade Hokkaido scallops, bay scallops, and oysters. Its homemade anchovy butter offers a powerful aroma of the sea. The roasted pork slices are tender and made with Berkshire pork belly. And the star of the dish is the homemade thick curly noodles. Chew them well before you eat.
