The GM mentioned how good this salad is and now I can't stop thinking about it! 🍓🥗

A gorgeous Strawberry & Burrata Salad over baby arugula and radicchio, finished with crisp prosciutto chips and a basil vinaigrette. Sweet, creamy, and the perfect salty crunch! ✨

As we continue celebrating our 40th Anniversary, the background image offers a glimpse into Prairie Star’s history. Taken in the late 1940s, it captures the expansion of the original 1920s adobe home, with the addition designed in keeping with traditional New Mexico Mission style. The home was transformed into Prairie Star Restaurant in 1985–86, beginning the next chapter in this remarkable building’s story.

We highly recommend reservations as these evenings are often sold out. https://www.prairiestar.mynewmexicogolf.com/prairiestar-reservations

Little could he have known the history that was just beginning. When this story appeared just weeks before Prairie Star opened in 1986, the former homeowner provided the inspiration for the headline: “Prairie Star Restaurant Has No History to Tout” in terms of historic events.

The Prairie Star we know today was built around the original 1920s adobe home of Eva Wade Duke, a BIA nurse, and later expanded into the distinctive New Mexico Mission-style residence seen here.

Forty years later, Prairie Star has become A True New Mexico Treasure — shaped by this remarkable home, the beauty of Santa Ana Pueblo, and four decades of memorable meals, celebrations and sunsets.

What a difference 40 years makes.

Long before Prairie Star became a restaurant, it was home. This late-1940s photo captures the expansion of the original 1920s adobe, which was eventually remodeled into the current day Prairie Star.

Look-back on the background for this week's menu: Long before Prairie Star became a restaurant, it was home. This late-1940s photo captures the expansion of the original 1920s adobe under architect August A. Nuner, who designed the addition in the New Mexico Mission style. Adobe bricks produced onsite, the home would one day become Prairie Star. The home was transformed into the restaurant in 1986. As we celebrate our 40th Anniversary, it’s a remarkable reminder that every meal we serve is part of a story that began decades before our first guest arrived. Full image in the comments.
