A premium bud-only green, Bird’s Tongue “Que She” is named for its tiny tapered leaves that resemble a sparrow’s tongue. Prized for their uniform shape and vibrant appearance, our lot was harvested and crafted Pre-Qing Ming, capturing another vivid expression of the early spring season.
The source farm is located at an elevation of eight hundred meters, and the bud material comes from a Mao Feng cultivar. During processing, the dense fresh buds are carefully rolled to create a shiny, bright green leaf.
The pan-firing process emphasizes clarity and sweetness, producing a clean and focused cup.
The aroma suggests orchid with a hint of chestnut, while the flavor is fresh and expressive, evoking sweet spring vegetables with a gentle nutty undertone. Link in bio.

This year, we traveled to China earlier in this harvest season as we planned to visit new areas and wanted to taste their first plucks. These mountainous terrains offered us new cultivars and new flavors, and a few of the teas these areas are famous for. Our timing proved fortuitous as first plucks were just beginning to be processed, allowing us to taste wonderfully fresh and captivating flavors.

Spring Harvest Trip to China – Journey Recap 🍃
Ned has returned from China after traveling across three provinces, from sea level to 2000 meters, tasting this season’s spring harvest.
This year’s teas stood out right away. Fresh, clean, with a depth and sweetness that lingers. From mountainside farms to long-standing partners, each stop revealed the range and character that define China’s tea culture.
Alongside new finds, many of the teas we already carry continue to evolve. With time, they settle and open up into something even more balanced and complex.
We’re bringing back a selection of exceptional spring teas that capture the season at its peak.

Spring Harvest Trip to China – Day 10: FuAn Farm Day

Ned spent the day at a small farm in FuAn, along the high mountain coast of Fujian. This farm is a source for what we call our fresh teas. Early spring harvests made for local tradition, not export. Unique, small batch, and often without a formal name.

These are the kinds of teas that become favorites like Green Monkey and Black No. 6.

This is where some of the most special teas of the season are found.
