At Parsley Sage Rosemary & Thyme, we love the holidays and all their traditions. Since food is such a special memory maker, we thought we'd share the recipe for a personal favorite that has become most popular with our clients; a dish we are certain will become your family's must have.
Many in the Silicon Valley had the joy of getting to know the late and much-beloved Chef Paul Prudhomme during his time at New Orleans by the Bay at Shoreline Amphitheatre – our Executive Chef Vince Guasch had the ultimate honor of becoming friends with Chef Paul and dining with him at one of his favorite restaurants in New Orleans, Chez Helene where the late Chef Austin Leslie (aka the Godfather of Fried Chicken) prepared the most delectable of dishes. Vince has always been inspired by the recipes and food of Louisiana and much like Chef Paul, doesn’t take measuring too seriously! Vince will always be grateful for Chef Paul’s influence not only with his love for food yet even more for his joie de vivre, his passion and his innovation long before innovation was a word used in the culinary world.
So naturally, we have an affinity for all things Louisiana and with that comes a love of including low country cooking in our holiday menu whether it's at home or for a client. Since Thanksgiving is upon us, Cajun Cornbread Stuffing is a must! It's requested over and over again and now, you can make it at home. This warm and inviting dish with a hint of heat and sweetness will add an extraordinary Southern touch to your meal whether it's on the day or any time you want a taste of Louisiana.

A few fun tidbits on Cajun cooking – you'll always find these three things in a recipe – bell peppers, onions and celery – the favored vegetables to add flavor to Cajun food that are also known as the “Holy Trinity”. Other favorites are cayenne pepper and garlic. Cajuns are fond of their spices and add these to most dishes they prepare.
