I always do my chicken last... why?
The same reason you grill the chicken last at a BBQ...
It is to prevent any chance of cross contamination. Raw chicken is highly likely to have Campylobacter bacteria and sometimes Salmonella and Clostridium perfringens bacteria as well. I would never want anyone to eat my jerky and end up with a foodborne illness. So I do my part to take all precautions when it comes to preparing the meats for jerky. So please do your part and...
