For our Mad Tea Party, we made a chicken pot pie with a twist - we added a vadouvan curry to the saucy filling. Vadouvan is a style of curry made by curing caramelized onions and garlic with curry spices. Since our menu is over 12 courses, we had to miniaturize our pie, but wanted to keep all the same ornate details. To go with that, we have a cucumber yogurt and a salad of zingy herbs.

FIRE AND ICE 🔥 🧊 This course is inspired by the mercurial nature of the Queen of Hearts.

Many of you have experienced dishes from our Sous Chef Felix, who is the master of corn and chiles, but British classics were a bit outside of his wheelhouse. He did connect with English “beans on toast,” and so we’ve landed at “beans on tostada.” We have a puree of fancy beans, emulsified with chiles, a bit of house made queso fresco on a house-cured hominy tostada. The fire and ice comes from the charred chile aguafresca sorbet that tops these tostadas. Enjoy.
