VERY PROUD OF TEAM USA 🇺🇸A look back at the Bocuse d'Or Grand Final 2023 through the eyes of Chef Jeffery Hayashi from Bocuse d'Or USA 🇺🇸:
👶 the "feed the kids" menu:
Taking on the task of showcasing the umami flavors of pumpkin and egg in a three course children's menu, we challenged ourselves to display whimsicality and deliciousness and nutrition.
Beginning with an adage to one of Walt Disney’s most beloved animated musical fantasies; Cinderella, we portray the infamous pumpkin carriage by marrying and highlighting the flavors of nutty bulgar, fresh dill, toasted walnut and chilled pumpkin to create a refreshingly well-balanced first course.
Continuing our fanciful story-telling theme, the main dish accentuates the well-known story of The Goose That Laid the Golden Eggs.
The final dessert plate is inspired by the contrast of lightness and darkness from the children's story, Snow White. The memorable bite of guanja chocolate merged with pumpkin and accompanied by a light and crispy rice praline and an enlivening flavor of citrus is a defining conclusion of the menu.
🐟 "theme on a platter":
Hawaii, besides being home to spectacular coastlines and mountains, is renowned for its lush agriculture and gastronomic history. The platter displays a breathtaking stairway presentation of succulent monkfish and scallops warmed by Matsutake mushrooms and contrasted with a hint of refreshing citrus. Continuing on the flavors from our coasts, we express the natural flavors of fresh mussels with the culinary tropical influences of Swarnadwipa curry and the creaminess of Soybeans.
Buttery, creamy Californian avocados are highlighted with bountiful fresh herbs to create a vibrant green goddess that is filled into a crispy “shaped” avocado shell that celebrates American native produce.
We pay homage to California’s fertile farmlands with our warm Egg, intricate mushroom marmalade can be found hidden inside, with a crispy potato shell exterior. The bones and skins of the monkfish are used to create our brown butter emulsion that ties all of our wonderful american ingedients of the platter together.
