About Chef Nichole:
Nichole is an American chef who has lived in Copenhagen, Denmark for over a decade. She recently moved back to the States and is currently looking for a commercial space in San Francisco to house her Scandinavian-inspired eatery, Kantine. Nichole attended culinary school in New York, and spent several years cooking alongside some of the most talented chefs in Boston before hea

ding to Copenhagen. Originally, Nichole's trip to Denmark was only meant to last a year, but she fell in love with the Danish culture, and her year abroad eventually turned into fifteen. Nichole calls San Francisco home now, but her passion for and experience with Scandinavian cuisines are still very much intact. Nichole's food is simple and clean, with flavors and textures that accentuate the ingredients.

Summer’s here and for a lot of people, that means time for travel and vacation. And we’re taking a trip too, just in a figurative sense, to Finland.

The blueberries were picked by hand by us on an organic farm near Stockton and they are making their way into Finnish-style blueberry tarts this weekend.

Sweet and intensely flavored, these berries are proof that you don’t always need a passport to be transported to another part of the world.

A quick note for this weekend at Kantine: due to an unexpected building maintenance issue affecting our ventilation, we’ll be offering a slightly smaller menu than usual while repairs are underway.
The good news? Our savory 3 grain porridge recently highlighted by the SF Chronicle will absolutely still be on the menu, along with our hot smoked wild salmon flatbread wrap and a selection of other favorites. Today is a very special day for Kantine ❣️

Scandinavian Everyday, is officially out in the world.

This book brings the food, philosophy, and recipes that have shaped Kantine from the very beginning, and we are so proud to see it make its way into home kitchens everywhere.

A huge congratulations and thank you to the incredible team behind the book: photographers and , food and prop stylist , prop assistant .food, recipe developers and testers , the entire team at , , and everyone who helped bring these recipes to life.

And thank you to our own amazing Kantine team, past and present, for helping build the community and spirit behind this book every day.

Once a year, we celebrate Norwegian Independence Day (May 17) with one of the best cake creations to have ever come out of this Nordic country: Kvæfjordkake. (Don’t worry if you can’t pronounce it because it also goes by a nickname: World’s Best Cake. )

Since the 17th is a Sunday this year, we’ll be making cake for both Saturday 5/16 AND Sunday 5/17.

With just twenty days to pub date (May 19!), dates for the first leg of the Scandinavian Everyday book tour are set! Touring was a highlight of my first book project - what a treat to meet so many people who share an interest, a curiosity and/or a love of Scandinavia! I have a hunch that it’ll be equally fantastic to see so many familiar faces and meet new folks this time.

I’ll be heading to Portland, Seattle and LA over the next few months, plus doing a few events here in the Bay Area as well as virtually. Check out the tour dates (in this post) and put a fat “X” in your calendar. (A second leg will be head east in the fall.) Hoping to see so many of you as possible, as we dive into the beautiful, simple and thoughtful food of Scandinavia.
