Eureka! It was a β€œgolden” themed week as we prepared our Golden Beet Hummus with baby corn, yellow carrots, "cheddar" cauliflower and yellow bell peppers. πŸ’›πŸŒž
Golden beets are sweeter than the red variety and, due to their yellow hue, less messy. 😊 They’re an excellent source of folate – which is crucial for cell growth and function. Did you know you can eat the leaves too? Beet greens can be sauteed like spinach or incorporated into a green smoothie. 🌱

Our first in-person class was a huge success! Students learned how to make Strawberry-Chia Jam using fresh strawberries, chia seeds, honey, and lemon for our RED class. We paired them with garlic crackers to make this dish sweet AND savory.
Jam is a versatile food & can be added to Greek yogurt, used to make stuffed French toast, or can be diluted with water to make popsicles! How would you eat yours?
