Chef-Partner Tommy Cleary brings a refined approach to yakitori and a wide variety of other offerings. To fuel and flavor the yakitori, Cleary will be using special charcoal, or Binchotan, imported from Japan.

Touching down today and on the grill tomorrow, we have Chef Pete Ho of the forthcoming Sumibiyaki Arashi in Vancouver, BC. Originally cooking in French cuisine, Pete migrated to Japanese cuisine after a working holiday at La Rochelle in Tokyo. His passion and love for charcoal cooking stemmed from stints at Nihonoryori Ryugin, and training at renowned yakitori houses like Torishiki and Torisaki Kyoto. We can wait to rock another collaboration night as we welcome Pete!

August 17th - Ozzie Mendoza Diaz - FOWLMOUTH - Puerto Rico -

Chef Ozzie Mendoza Diaz has landed! No literally, dude just got off a plane from a trip to Tokyo. Chef Mendoza Diaz of FOWLMOUTH in Puerto Rico, by way of New Orleans, is going to bring it tomorrow night with a distinct twist of Puerto Rican and East Asian cuisines to the table. Drawing on inspiration from his upbringing, his grandmother’s foul mouth, and fresh off his trip to Japan, we can’t wait to see what Ozzie surprises us with!

Hina+ToriSumi Collaboration Series - Dinner #1

August 9th - ToriSumi Yakitori, DC

FOUNDATION: A callback to the shops we trained in, presenting our favorite dishes we learned under our respective chefs in Japan.

We will be hosting and collaborating on each menu with our good friend, Blake King of . Like Chef Tommy, Blake trained in Tokyo, most notably spending a year working at the Michelin Bib Gourmand awarded Yakitori Imai in Aoyama. Based in Washington, DC, Blake is a veteran of the restaurant industry having just recently consulted on the opening of the multi-concept Japanese food hall Love, Makoto, and worked his way through the ranks of some of the best restaurants in DC, New Orleans and Chicago before committing to spending several years training in Japan. Since returning from Tokyo, Blake has been showcasing yakitori through pop ups, festivals, private catering and retail stores around DC while he looks for the right space to open his yakitori omakase restaurant.

Our FINAL NIGHT of service will be Saturday, August 31st.

It is with mixed emotions that we announce our final night of service. Old friends and new, please come join us for one final month of Chef Tommy’s yakitori tasting menu, and Justin Chin’s beverage pairing.

With Tokyo roots, Chef Tommy opened Hina Oakland in 2016. We then opened Hina San Francisco in Fall 2019. After enduring a worldwide pandemic that we all endured, Hina returned to full operations. As we look to our future, we know Hina’s story needs to come to an end. Please come celebrate our journey, take part in our collaboration dinners, and help us end with a bang!
