Hi Everyone,
We would like to inform you that we have passed the health inspection this afternoon and are permitted to open as soon as tomorrow. However, we are planning to remain closed for this week including weekend. We will use the time to get together and discuss about what we have learned and how we can do better. Reopen date will be decided and announced once part is done. Sorry for the inconvenience!
For people who commented or messaged us, sorry that we may not be able to reply you all! We have been focusing on making every effort to the corrections the fastest possible. We started cleaning and disinfecting all area and every single item right away. Big thanks to everyone in the Komeya team for the prompt response and efforts in making the correction!
ASAP Rodent Solution did the inspection again this morning and make sure there’s no sign of infestation. They also did their part of cleaning and disinfecting, as well as repairing the damaged spots, sealing all gaps, and reinforcing areas for stronger prevention. And they made sure there’s no more gaps and nothing can go through it. Many thanks to ASAP Rodent Solution!
Regarding some comments about the observation in the report, please allow me to explain this. I find it could be misleading, so I also talked to our health inspector, Amelia today, and I was encouraged to explain this here. The observation says “observed raw chicken stored above salmon, in cooler.” What it didn’t mention was that the raw chicken were sealed in bag in its own container stored in the shelf level above the shelf of the salmon, NOT directly in contact with the salmon. And the salmon is also protected and stored in its own containers below the shelf of the raw chicken. Both the raw chicken and salmon were in different shelf level in the fridge and had no direct contact. We have to admit that they were stored in the wrong order, so we corrected it right away and educated our new staff about this. Hope this explanation clears the any possible misinterpretation and confusion. We appreciate your understanding!
Lastly, please allow me to say to myself, “keep chasing after the takumi heart!”
This time, sincerest thanks,
Simon
