Our 12 day lime-pickled anchovies!!!

1. Receive anchovies from
2. Remove the heads, split the belly and remove the inner lining
3. Scale
4. Rinse in salted ice water
5. Marinate for two days in lime juice, garlic, basil, salt and water
6. Strain (saving the basil and garlic for dehydrating)
7. Remove the spine
8. Finish in oil for 10 days
9. Serve!

The nets are getting ready!! Local anchovy season opened on April 1st as it does every year. Some years we see them immediately and some years we don’t see them until mid May! visited our fishermen on Sunday to get a status report and they’re almost here! Stay tuned to IG and you’ll be the first to know when they land at The Anchovy Bar!!!

Asparagus + Anchovies + Burrata!!!

Blanch asparagus until just tender. Cut into bite size pieces and toss with shallot vinaigrette, pickled shallot, pink peppercorn, and black pepper. Add a dollop of yellow beet vinaigrette to the plate. Top with asparagus salad, anchovies, burrata cheese, pink peppercorn and chives. Enjoy with our hot focaccia!
